French Lentil Ragout
Great base or side dish to single proteins, pairs well with most meats although beef has too similar a taste profile so avoid steaks.
Ingredients
- 1/2 Large Onion
- 1 Large Carrot
- 1 Large stick of Celery
- 1 Tbsp Tomato Paste
- 1 tbsp Olive Oil
- 1 Bay Leaf
- 1 Thyme Sprig (or 1/2 Tsp dried Thyme)
- 1 Cup French(Puy) Lentils
- 3 Cups Vegetable Stock
