French Lentil Ragout

Great base or side dish to single proteins, pairs well with most meats although beef has too similar a taste profile so avoid steaks.

Ingredients

  • 1/2 Large Onion
  • 1 Large Carrot
  • 1 Large stick of Celery
  • 1 Tbsp Tomato Paste
  • 1 tbsp Olive Oil
  • 1 Bay Leaf
  • 1 Thyme Sprig (or 1/2 Tsp dried Thyme)
  • 1 Cup French(Puy) Lentils
  • 3 Cups Vegetable Stock
